Laura is the creator of Gigi Trattoria, a modern Trattoria with a warm, welcoming ambience. On any given night you can find Laura greeting new guests and chatting with the regulars there, many of whom return a few nights a week to enjoy the consistently delicious, seasonally variable dishes by Chef Wilson Costa. At Greig Farm in Red Hook, Laura crafted Gigi Market, a cozy indoor Farmers’ Market and Café with local rustic charm and produce, where one can enjoy her famous Gigi Skizza™, panini, sandwiches, soups, salads and baked goodies, with locally made beverages including beer and wine.

Laura is also partner in and chef for Just Salad, the freshest concept in exceptionally healthy, fast food eateries expanding with restaurants in five NYC locations and two Hong Kong locations.
